Cupcakes Galore!

If you’re a cupcake fan, like myself, then you’ll love this blog I have found for you. The title is “Cupcakes Take the Cake.”

Even if you don’t feel like baking these cupcakes, take a look. The designs are pretty cool and the pictures are amazing. They may even inspire you to put your apron on and bake!

Breakfast… Or Dessert

Want something new for dessert… or even breakfast? Try Monkey Bread!

There are only a few ingredients and it is very simple to make. Here’s a website with the recipe on it.

INGREDIENTS
  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 2 cans (16.3 oz each) Pillsbury Grands Homestyle refrigerated buttermilk biscuits
  • 1/2 cup chopped walnuts, if desired
  • 1/2 cup raisins, if desired
  • 1 cup firmly packed brown sugar
  • 3/4 cup butter or margarine, melted
 
DIRECTIONS
  • Heat oven to 350°F. Lightly grease 12-cup fluted tube pan with shortening or cooking spray. In large -storage plastic food bag, mix granulated sugar and cinnamon.
  • Separate dough into 16 biscuits; cut each into quarters. Shake in bag to coat. Arrange in pan, adding walnuts and raisins among the biscuit pieces.
  • In small bowl, mix brown sugar and butter; pour over biscuit pieces.
  • Bake 28 to 32 minutes or until golden brown and no longer doughy in center. Cool in pan 10 minutes. Turn upside down onto serving plate; pull apart to serve. Serve warm.
 

Fun Recipes!

This week I’ve got some new, fun recipes for you! I found these using the website StumpleUpon.

The first one is called “Rainbow Cake in a Jar.” It is very simple to make and has an awesome turnout!

All you need is:

  • 1 box of vanilla cake mix
  • Neon food coloring in five different colors
  • 3 one-pint canning jars
  • 1 can of vanilla frosting
  • Rainbow sprinkles

These ingredients are easily found in the grocery store and are fairly inexpensive. Check out the recipe here and see how to make them!

The other recipe I found is great for any child that loves Sesame Street. These “Cookie Monster” cupcakes are adorable and involve household baking items. Check them out here.

Banana Bread: Pick Your Recipe!

Banana bread is always a classic, but recently I’ve found an easy way to make the banana bread you love quicker.

Chiquita makes a banana bread mix that you only have to add 2 bananas, an egg and 1/3 cup of water to. It’s fairly simple to make and only takes around 45 minutes to bake. The end result is a moist, delicious bread that tastes like you made it from scratch! You can find it in the produce section of the grocery store.

 If you want to make your own banana bread from scratch, here is a recipe I found online:

Ingredients

  • 1/4 cup butter, softened
  • 1 cup sugar
  • 1 cup mashed fully ripe bananas
  • 1 cup BREAKSTONE’S Reduced Fat Sour Cream
  • 2 eggs
  • 2 1/4 cups flour
  • 1 1/2 teaspoons CALUMET Baking Powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped PLANTERS Walnuts (optional)

Directions

  1. Heat oven to 350 degrees F. Beat butter and sugar in large bowl with mixer until well blended. Add bananas, sour cream and eggs; mix well. Add combined dry ingredients; mix just until moistened. Stir in nuts.
  2. Pour into greased and floured 9×5-inch loaf pan.
  3. Bake 1 hour or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan to wire rack. Cool completely before slicing to serve. Refrigerate leftovers.

Gluten-Free Baking

Baking can be tough enough. But if you have a person in your family that has Celiac disease, baking can be a lot tougher.

If you plan on baking gluten-free desserts, you have to make sure that you use the right ingredients. Carol Kicinski has written a book with simple recipes for baking gluten-free desserts. The book is titles “Simply… Gluten Free Desserts.”

Also, if you’re a fan of TLC’s show “DC Cupcakes,” you may have seen the episode where they baked gluten-free cupcakes for a customer. Here is the website for Georgetown Cupcake where you can find gluten-free cupcakes on their menu! Georgetown Cupcake is located in Washington, D.C.

Coffee Cake With a Blueberry Twist

One of my favorite desserts or even breakfast treats is a slice of blueberry buckle. My mom always made it and now that that I’m older, I make it often!

Blueberry buckle is nothing more than a coffee cake with blueberries in it. The thing I like most about it is the fact that you can have it for breakfast… or dessert!

It is a fairly simple recipe to follow and involves all you baking basics such as flour, sugar, milk, eggs, etc.

Here’s the recipe I found online. It happens to be the same one my mom has written down. Try it for yourself and let me know what you think!

Ingredients

  • 3/4 cup white sugar
  • 1/4 cup shortening
  • 1 egg
  • 1/2 cup milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup butter, softened

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease one 8×8 inch pan.
  2. Cream together 3/4 cup sugar, shortening, and egg.
  3. In a separate bowl mix together 2 cups flour, baking powder, and salt. Stir into sugar mixture, alternating with milk. Stir in blueberries. Pour into greased 8×8 inch pan.
  4. To make topping: Combine 1/2 cup sugar, 1/3 cup flour, cinnamon, and butter. Sprinkle over cake batter.
  5. Bake at 375 degree F (190 degrees C) for 25-30 minutes.

Bake Your Way to One Million Dollars

So if you’re feeling pretty confident, I have some news. Pillsbury is hosting their 45th annual Bake-Off contest and they want you… and your fun recipes of course! You have until 11:59 a.m. (central time) on April 18, 2011 to submit your entry form.

There are four categories you can enter. The two I would suggest would be: Breakfast and Brunches or Sweet Treats. This gives you a chance to show off what you’ve been practicing at home and maybe win some cool prizes!

Recipes will be judged based on the following criteria: taste, appearance, creativity and consumer appeal. These recipes MUST be original and cannot be found in any cookbook, magazine, on food blogs, food websites or anything of that sort.

If you didn’t get a chance to try the one in Atlanta, try this one!! Try your best and maybe you’ll win ONE MILLION DOLLARS!
